When you need one

The old URL is now a dead end, and anyone who linked to it, bookmarked it or found it in Google still goes there.
Your old product pages have picked up links and search ranking over the years. Redirect them rather than throwing that away. → Importing a shop
Send it to a replacement, or its collection. Anything relevant beats a dead end.
Any address that used to exist and doesn’t now.

Setting one up

Give the old path and the new one. It resolves before the page loads.
Send people to the most specific relevant page you’ve got. Redirecting your whole old shop to your home page looks tidy but Google treats it as a dead end anyway, so you gain nothing over the 404 you were trying to avoid.

Get your old URLs out first

From the old platform, or from the list of indexed pages in Google Search Console. Do this before you switch anything off — once the old shop is gone, reconstructing that list is painful.

Old to new. Products first, then collections, then everything else.

Add the redirects

Before you point the domain over, so nothing is broken even briefly.
